A Quick Cake For An Emergency Pudding

I had a surprise visit from a couple of old friends yesterday.  They made a last minute decision to come up from The City for lunch.  I was super excited but caught a bit on the hop because we only got home from the beach on Saturday.  My friends kindly picked up a couple of quiches on the way and bought salad ingredients.  I was so excited they were coming, I thought I had better do something to make them feel welcome. So I channelled my inner Nigella and made a Pineapple Tea Cake.

The beauty of this cake is it takes about ten minutes and all the ingredients are usual pantry staples at The Farmhouse. It ticks the emergency pudding box well and truly. The cake is not super sweet although it sounds like it should be.  The recipe was given to me years ago by a workmate.

Ingredients


  • 1/4 cup of margarine
  • 1/4 cup of caster sugar
  • 1 egg
  • 1 cup of SR flour
  • 2 tablespoons of milk
  • pinch of salt
  • tinned pineapple (a small tin) drained with syrup reserved
  • 1 tablespoon of melted butter
  • 1 tablespoon of cinnamon
  • 1 tablespoon of sugar
Heat oven to 180 degrees and prepare (I grease and line) a round cake tin.

Cream margarine and sugar then add your egg and keep beating

Sift in flour, add salt and milk.  Beat some more.

The mixture makes quite a sticky batter which I then sort of smooth out into the tin.  Top with cut up bits of pineapple.

Pre Baking

Bake for about 20-25 minutes.  Meanwhile mix the sugar, cinnamon and melted butter together.  When the cake is done, let in cool in the tin for a little while and then remove and place on a plate.  While still warm brush the melted butter mixture over the top, let it soak in and repeat in 5 minutes or so.

I tend to serve it warm with ice cream or cream.  If you like you can also warm a little of the reserved syrup and pour over too.

It is one of those cakes that looks like it took a lot longer than it did. You will look like a complete Domestic Goddess with about ten minutes effort.  You've got to love that as a concept...

Great recipe, I wonder if it would work with pears which are the favourite in our house? Also having some kitchenaid envy, but have to wait for a new kitchen to be able to store it and still vacillating over the colour choice as well, it's down to cream or pistachio for me.

Bungalowgirl - I think pears would work as long as they weren't cut into big pieces. They have to be light enough to stay on top of the cake batter and not sink in.
