Very Easy Unauthentic Thaiesque Chicken

This is one of my favorite and easy recipes for a yummy dinner.  It doesn't really have a name because it is a combination of a few different recipes that I have made for years.

It is super yummy.

The ingredients are

  • chicken thighs
  • chilli
  • 1 tin of coconut milk
  • a red onion
  • a bunch of coriander/some basil too if you have it
  • lime/lemon juice
  • brown sugar
  • fish sauce

Ingredients
First of all I chop the onion and fry it up.   After the onion has softened a little I add the chopped up chicken thighs.

Then I chop up the herbs and chilli.  A glass of wine is optional but personally I think it helps the chopping process considerably.

Chopping With SSB
Then I add half the chopped herbs, the chilli and the coconut milk to the pan.  I let it simmer for a while and then taste it and add lemon/lime juice, brown sugar and fish sauce according to taste.  I don't really know exact quantities but definitely only a splash of fish sauce.  Maybe roughly a dessertspoon of brown sugar and half a lemon/lime...  Play around until you are happy!

When I am happy the chicken is completely cooked I serve it over steamed rice. I pop the extra herbs and some chilli on top.

The Finished Product

The Farmchildren won't eat this so it is one of the few occasions I happily serve them this for dinner.

Hey that looks great. When I saw what the ingredients were I wondered whether the Farmkiddies would eat it. Had to laugh when I saw your last photo - that's what my boys would have too lol!!!

I always feel daunted by anything with coconut milk, but must say this looks really delicious and fairly easy!

I definitely think the glass of wine is essential. Glad we are not the only ones with unadventurous children! Who would want nuggets and chips when they could have *that* culinary delight?

Multiple Mum - Glad we are in agreement on the wine. What is it about nuggets and chips that attracts kids? I wonder if it is the texture and very bland flavour?

Well, we finally got around to enjoying this meal and enjoy it we did!
Cpt. V said over and over "I'm loving this meal!" as we ate it and The Gifts liked it too [although I may have overdone it putting in two birdseye chillis -oops, my fingers are still burning!].

The best thing is that everything was either in my fridge, pantry or garden so I think we be having some unauthentic Thai again soon.
