Chicken And Corn Soup |
Ingredients
- cut up cooked chicken, roughly about a cup
- 1 litre of chicken stock
- 1 400g tin of creamed corn
- 1 large zucchini, grated

The method is so easy it is almost not worth writing down. Throw the whole lot in a pot and simmer for 20 minutes. Pop it into a bowl and serve with crusty bread and salt and pepper.
Yummy, healthy and super easy. Got to love that as a concept.
I hope everyone had a fantastic weekend. Busy weekend here on The Farm as per usual....!

You're a clever bird! Too easy. Why didn't I think of this? A nice one to add to my repetoire of "What to do with these leftovers". Thanks AFW. :)
Just my kind of recipe. Any excuse to pop down to Coles for another of their rotisserie chickens.

Yum! - and served so nicely in that beaut Spode dish (I <3 blue and white china!).
What a great recipe and a perfect weekend for soup! I love the addition of zucchini. I'm always keen for ways to add a bit more veggie into the diet. I think this will be made soon.
Made this last night for mine and hubbys tea!! Loved it!!! With the left over chicken I made chicken and corn fritters!! The things you do with chicken!! LOL :)
Thanks everyone. Miss Nell - thanks for letting me know how it went, so glad you liked it.
