This Sweet Potato Soup is perfect for a winter's lunch but is also light enough to be served as quite a stylish starter.
Here we go:
Ingredients
- 2 average sized sweet potatoes (or kumaras if that's what you want to call them)
- 1 biggish pear
- 1 onion
- 1 L of chicken stock
- cream (optional)
Roughly chop the onion. Peel and roughly chop the pear and the sweet potatoes. Gently fry the pear, sweet potato and onion in the bottom of a heavy based pot with a little bit of olive oil. When they are softened slightly pour the chicken stock in over the top.
It will look like this.

Then bring it to the boil and let it simmer for about 20 minutes or until the sweet potato and pear are throroughly cooked.
Then just puree the soup in whatever way you wish. I just put it on a stable surface and whack the stick blender in. I am all for taking the easiest option in the kitchen. I am sure you would get better results in a proper blender but I am happy to live with the odd lump when it comes to soup.

If you like you can add some cream to taste. I didn't for the simple reason that I had none. Likewise some chopped fresh coriander is nice too if you have it.

This is what we had for dinner last night with sour cream and chopped spring onions on top along with a homemade tomato, feta and herb loaf. Twas delish!
The addition of a pear was a surprise to me..though I can imagine that it would add to the sweetness of the soup and add a lovely depth of flavour!
This is an interesting recipe, sounds very healthy too. Might have to give it a try...

How Funny, I loooove my stick blender too, fantastic for soups. Mine makes them really smooth. I can highly recommend the Braun one (it comes with a whisk too). Who wants to be pulling apart and washing blenders. I'll have to try this one soon.
Yum, I have got heaps of sweet potatoes to use up at the moment. I'm going to try your recipe tonight, and I love anything simple. My kids also love them sliced thin, and fried in olive oil with fresh rosemary and sea salt.
Just found your sweet potato soup recipe via kakka's blog and it sounds super delicious. As we are both diabetic MOH and I have to be careful what we eat but kumura is a GI intermediate so not too bad for us and pears are good of course and no problem with an onion. I notice you have other recipes as well which I will check on later.
