A Really, Really Slack Dinner...Gourmet Foodie Snobs Beware

Before I moved to The Farm I was a bit of a fresh food snob.  I used to buy the ingredients for dinner and my choice was dependent on what looked gorgeous and fresh at the gourmet grocer down the road from my flat.  And then I moved to The Farm.  And then the nearest basic supermarket was 35 km away.  And so my ingredient list and  cooking style changed.  For the simple reason that it had to.  Or The Farmer and I would have been very hungry.

I also now have to come up with something that everyone in the family will eat.  So I often resort to tins of stuff.  I don't do the horrible precooked braised beef stuff but more the tinned vegies etc.

Dinner last night relied heavily on the tin section of my pantry. The recipe is a bit of a "happy housewife" number.  If you have major issues with that you are reading the wrong blog...


Basically I cut up a 250g of bacon, fry it up in a pan.  Add about 800g of chicken thighs and brown the outside.  Then I pop the bacon and chicken thighs in a roasting dish.





I then make an exceptionally tricksy, uber chef like gourmet sauce by combining these three things.




I know - very slack.  Just mix the tins of creamed corn and drained butter beans in a bowl.  I often add half a cup of cream, but I don't always.  Cream comes in tins too....

Then I tip it over the top of the chicken and bacon.  Top with some grated cheese and bake in a moderate oven for about half an hour or until the chicken is cooked.

That's it.  I sometimes serve it with steamed vegies or on a really slack tart day, with frozen peas.  Nigella once described herself as the "Queen of the Frozen Pea".   If they are OK for Nigella then they are OK for the rest of us.

This recipe is so good. I don't know why you are so hard on yourself. You are still preparing your family a home cooked nutritious delicious meal. I think you need to be a bit kinder to yourself:)
